Taste a Legacy of Food and Farming

As the late afternoon sun illuminates the fields and hills surrounding Tulsi Fields Farm outside Glen Rock, Brandon Hufnagel and his business partner and CFO (Chief Farming Officer) Matt Wink unearth a healthy crop of beets and carrots from the soil. These root vegetables are destined to star in one of the seasonal dishes on the menu at the Glen Rock Mill Inn.

Serving southern York County for more than 30 years, the Glen Rock Mill Inn offers casual and fine dining with a focus on farm-to-table freshness. Tulsi Fields Farm, a 26-acre property that has been in Hufnagel’s family for six generations, is one of several agricultural sources from within a 25-mile radius that provide the ingredients that inspire the Mill Inn’s cuisine.

In the kitchen, Executive Chef Lawrence Hare of New Freedom and Hufnagel work closely to build “creative flavor profiles” that unite bold combos of tastes and textures on the plate. Think garden green salads with beet greens, fresh baby spinach, smashed heirloom potatoes and a nasturtium garnish.

Along with guest room renovations, Hufnagel says he’s aimed to elevate the dining experience since becoming the new owner of the Glen Rock Mill Inn this year. Together, staff members give guests the taste of a legacy of food and farming in York County in a historic restaurant setting. Dishes reflect restyled Pennsylvania Dutch favorites, specialties inspired by Executive Chef Hare’s 20-year career in restaurant establishments in the Napa Valley region and Sunday brunch classics.

“We want to be that shining light in the community,” Hufnagel says.“My family has a deep connection to Glen Rock, and growing up, I was taught that giving back to community was so important. We believe in the importance of freshness and making sure that our community’s farms continue to stay around.”
